Y'all...Ms. Brown (enough said)

This is her smothered chicken recipe. Sooo good and easy to make. I made mine with wild rice and fresh green beans, but it would be good with collards and I'm sure other sides too! It was delicious! (The hubby, who is not fond of thighs, would have preferred chicken breasts) but you can't please everyone. 

Hubby's been working nights...

I know many of you have this situation in your home, or maybe you are the one working nights, well I have the answer for you. Make two meals that are easy to reheat. One is my co-workers favorite (I got the recipe from her) good ole chicken and rice. And sausage rice (from an old navy buddy my husband knew) both ar full of flavor and store well and reheat well, it will make at least 10 servings all together...

So yesterday was quite eventful. I had planned a big dinner for my family when I had to take my cat to the emergency vet, she is getting older but is doing much better today. So with that said I have made...dun dun dun...Low 'n' Slow Bolognese. It is in the crock pot now, spent about 5 hours in there yesterday.  It's like a really elegant spaghetti sauce. With bacon and red wine. I was supposed to make it with beef chuck. But instead I made it with ground chuck. I'm pretty sure it will be just as delicious as it smells. 

Work Lunch Prep

So one of my favorite things is making or creating based on what I have on my fridge that just about to go bad. I had some cherry tomatoes left over from the birthday party and knew just the right dish. I added some seasoning, feta, spinach, garlic, butter and pasta and voila!  Gonna be so good on Monday!

I haven't created anything the last couple of days, with the vet appointment and getting ready for next week we've eaten out, 🌶️'s yesterday and firehouse subs today and shopping for next week. More to come, also if you do see anything you like and are interested in what I used, just let me know and I'll pass it on.

I'm tired today

Well it's been an exhausting couple of days. Had to make an appointment for my fur baby and it wasn't until today. They've taken blood and we'll know more on Fri. I'm a nervous worried mess. So salad tonight it is...

Mondays Are Hectic...

Mondays around here are the most hectic. Always have been, since my kids were in school. Even though it's been a while since they've both graduated it still proves to be the busiest day of our week. To solve this dinner problem, we call Monday's ~whatever days~. That means you eat whatever you want, whip up something fancy for yourself. Usually me. Heat up a frozen pizza. Usually the hubby. Or left overs, depending on what it is, my youngest and friends will take care of those, cuz it's what is fastest for their video game time after work or the pool. Tonight I choose rice. Rice a Roni cheddar broccoli rice. Delicious, it reminds me of the times when I couldn't afford much and would make one box last at least 3 meals. 

Birthday Dinner Party Part 2

Well no one dressed up, like I asked them to, and my husband thought it was stupid for us to act like waiter/waitress. I went to a lot of trouble for this and it goes appreciated and no gratitude. You try to do something special for someone and nothing it really does suck the 'want to' out of you real fast.   But as promised here is our dinner. Spaghetti Carbonara with bread sticks, frozen Walmart brand, still really good!  I prepped the salad this way so each individual could have it the way they wanted it.  Cheers

Birthday Dinner Party Night Part 1

Well, tonight is the night. Make the offer, it's accepted. Now the ball is in my court. Lots and lots and lots of prep goes into something like this. Decorations, menu, food, appetizers, details, etc. Asking everyday, how many people are coming? To the point that my son is aggravated with me, only to, low and behold, the day of! Mom, it's only gonna be 5 now. OMG! Anyway, I pick my jaw off the floor and continue on. Trying to make sure everything is done on time, and temperature ready. House is clean. Every ingredient in the house. My mother, knowing me really well, suggested that I "cheat" and get already made cakes, say from Nothing Bundt Cakes, that worked out perfectly!  Appetizers are assembled and in the fridge.... Bacon is made, really to be added to the pasta carbonara later! (More importantly, at least to me, the stove is clean again) Oh, crap...off to clean the bathroom! 

Party Ready - Frozen Pizza "Handy"

I didn't cook dinner again tonight, the hubby heated a frozen pizza in the oven. I am getting ready for a formal dinner party tomorrow for my youngest son to celebrate his birthday with his friends. Lots of pictures and cooking to come tomorrow. 

Youngin's Birthday

My youngest turned 19 today so dinner was his choice. Chick-FIL-a it is. I picked a really busy time to start this blog, but that's what it's all about right? Trying to juggle life and the curves it throws our way. Sometimes eating out is just the break you need. I did stop by the grocery store and picked up a 12 pack of mini cupcakes. And turned it into the number '19'. I promise I do more cooking! More to come....

Week Plan

My husband and I usually plan what we want to do for dinners on Sundays for the week. We either go shopping on Thursday nights or Friday nights to avoid most of the crowds. We decided to go tonight so we ate out at Mexican. Los Aztecs the best Mexican restaurant in our area. I am planning a huge dinner party tomorrow for my son's friends for his birthday. More to come I promise.

Hot Dogs ~ No, Not Boring

  So tonight we had hot dogs. I know, I know - hot dogs? Really? How boring. Listen Linda, no meal is ever boring when you make it your own. It's really what I wanted to eat yesterday but I didn't have enough slaw. My family has been through countless brands of hotdogs over the years. Oscar Meyer, Ball Park, just to name a few. I like the "everything" dogs, my husband is an "all beef" only kinda guy. Only until a few years ago my husband and father-in-law went golfing, I guess it's customary to stop mid way through the holes and eat a hot dog. I wouldn't know, I'm not a golfer. He said, "Babe, you have got to try this hot dog I had today on the golf course. It was so good I asked the server girl what the brand was!" I was leery cuz I don't care for the all beef, but he was so excited (like a little child) I couldn't let him down. He said they are bun length skinless Nathans. My face I'm sure showed that I was less than thril
